Ethiopian pulses are being produced on small hold lands andnd in organic o fertilizer, pest sides and improved seed is not practical for the production of these items. Currently, there is a growing demand for organic spices in Europe, USA and Japan for food colouring, cosmetics, pharmaceuticals, essential oil derivatives and textile industries.

Black Cumin has a long history of uses for food flavours,perfumes and medicinal values. Ethiopian variety of cumin seed accumulate up to 50% thymol. a monocyclic phenolic compound.

Ginger is a rhizome that grows underground from a seed piece. Ginger plant can grow 3-4 c.m tall. It is consumed as a delicacy, medicine, or spice.
